Squid ink pasta with shrimps

Nobody wants to spend hours behind the stove during the summer. That’s why we are grateful for easy to prepare recipes. And today, I present you one of them.

Everyone who likes the taste and smell of the sea will be delighted. Prepare all ingredients in advance and within 15 minutes you can serve fresh and excellent food.

If you’ll like squid ink pasta, look for a squid ink during the vacation. Not only it adds the beautiful color to risotto or pasta, it also adds a great seafood taste to your meals.

Ingredients (serves 4)

Prep time: 10 minutes + 15 minutes (cooking)

  • olive oil
  • 4 garlic cloves, cut into thin slices
  • dried chili
  • 250 g squid ink pasta
  • 16 pcs tiger shrimps, cleansed soaked in salt water for at least 10 minutes
  • salt
  • parmesan shavings
  • fresh parsley, coarsely chopped

Instructions

Fill the large pot with the water and bring it to a boil. Bear in mind, that 100 g of dried pasta needs 1 litre of water and 7 g of salt to be perfectly cooked.

Meanwhile, prepare the rest of the ingredients. Heat the pan, add 2 tbsp of olive oil, garlic cloves and dried chili flakes. Add shrimps and cook them for app. 2 minutes (each side). Season with salt, if needed. See how the shrimps start to change its color. Once they turn bright pink and white, they are cooked. Don’t overcook them.

Cook the pasta. Pour the pasta through a strainer, return it to the pot and toss it with shrimps. Add parsley, olive oil and mix well. Serve with parmesan shavings.
