Christmas gingerbread roll
Discover the traditional flavor of Christmas with this simple gingerbread roll full of walnuts, dried plums and home-made plum jam. You can fill the roll with whatever you like, but the classic combination is irresistible.
Ingredients (3 rolls)
Dough
Preparation: 25 minutes + chilling + 15 minutes baking
- 350 g all-purpose or whole-wheat flour
- 120 g icing sugar
- 2 tbsp honey
- 2 eggs
- 1 tsp baking soda
- 1/2 tsp mix of ground cinnamon and ground cloves
- vanilla sugar – optional
- 1 egg for brushing
Filling
- plum jam
- walnuts
- dried plums
- you can use also: raisins, small pieces of dark chocolate, candied fruit, dried fruit
Instructions
Add all the ingredients to the bowl (except for the egg for brushing) and make a dough.
Divide the dough into three equal parts, wrap them in the plastic and let them rest overnight in the fridge.
The next day, pre-heat the oven to 180 °C.
Roll out the dough into a rectangular shape (app. 35 x 20 cm). Spread the dough with plum jam, sprinkle with dried plums and walnuts (or anything else you have).
Roll it up as a strudel, close the sides of the roll and transfer it to a baking sheet lined with baking paper.
Place the rolls with the endings in bottom, so they won’t get open.
Brush the dough with an egg wash and bake it for 15–20 minutes.
