How to preserve wild leek?
Wild leek or ramp is one of the first ingredients, which always brings me the joy in the spring. Its beautiful color indicates the coming season. For this reason, I have cans ready to preserve any seasonal flavors.
Fresh leaves of wild leek is great ingredient for salads, spreads, or for making endless combinations with breads and sandwiches. Try this one – fresh bread with butter, tomato, few leaves of wild leek and season it with pinch of salt. Or use the wild leek for making soups, pasta, and meat.
Preserve the taste of wild leek, mixing it with olive oil. It is ideal for flavoring soups and broths, which get a beautiful green color and leek taste. Use the mixture for making pasta sauces, salads, or season with it any food where the taste of leek is needed.
Ingredients
Preparation: 10 minutes
- 200 g wild leek
- 2 tbsp olive oil
Instructions
Rinse thoroughly the wild leek leaves, dry them and place them in a blender. Add olive oil and blend for a minute or two.
Put the mixture into prepared ice-molds; or make small portions and wrap it in plastic. Store it in the freezer.
If you pack the mixture in the plastic wrap, place the portions in a sealed airtight container suitable for freezing. It prevents the freezer from wild leek smell.
